    1 Cup Chopped Dates
    1 Cup Boiling Water
    1 Teaspoon Baking Soda
    1 Tablespoon Butter
    1 Cup Sugar
    1 Egg
    1 1/4 Cups Flour
    1 Teaspoon Vanilla Extract
    1/2 Cup Chopped Pecans
    Icing
    1 Cup Chopped Dates
    1 Cup Packed Brown Sugar
    1/2 Cup Water
    1/2 Cup Chopped Pecans
    1/2 Teaspoon Vanilla Extract
    1 Cup Whipping Cream, whipped

    Recipe



    Combine 1 cup chopped dates, boiling water, baking soda and butter in a bowl; mix well. Cool slightly.

    Combine sugar and egg in bowl; beat well. Add flour and 1 teaspoon vanilla extract; mix well. Stir in 1/2 cup pecans and date mixture.

    Pour into a greased 9x13-inch cake pan and bake at 350 degrees for 30 minutes, or until cake tests done. Cool in pan.

    Combine remaining cup of chopped dates, brown sugar, water and 1/2 cup pecans in a saucepan. Simmer for 3 minutes, stirring frequently. Stir in 1/2 teaspoon vanilla. Spread on top of cake and top with whipped cream.

    YIELD: 15 servings
