1 Cup Hazelnuts
1 Pkg. Candied Natural Pineapple (8 Oz.) cut up
1 Cup Walnut Halves
1 Cup Pitted Dates
1/2 Cup Seedless Raisins
32 Oz. Fruit Cake Mix
3/4 Cup Flour, sifted
8 Oz. Red Candied Cherries
1 Teaspoon Baking Powder
8 Oz. Candied Assorted Fruits
3/4 Cup Sugar
1/2 Teaspoon Salt
3 Eggs
1 Teaspoon VanillaRecipe
Grease bottom and sides of a 9x5x3" loaf pan. Line bottom with waxed paper and grease paper.
Combine nuts and fruits in a large bowl. Sift dry ingredients over nuts and fruit and mix well.
Beat eggs in a small bowl until light and fluffy. Add vanilla and blend thoroughly into nut-fruit mixture. Spoon into loaf pan and spread evenly.
Bake in a slow oven (300 degrees) until firm on top (about 1-3/4 to 2 hours). Cool cake in pan for 10 minutes. Loosen edges, turn out on wire cake rack, remove wax paper, and cool completely. Foil wrapped fruit cake keeps well in an air-tight container.
This makes about a 5-pound cake.
