Banana Caramel Cheesecake

38 Vanilla Wafers
6 Tablespoons Butter, melted
16 Oz. Light Cream Cheese
3 Eggs
3/4 Cup Plus 2 Tablespoons Sugar
2 Tablespoons Flour
1 ½ Teaspoons Vanilla Extract
½ Cup Caramel Syrup
2 Bananas, peeled, sliced in half lengthwise and cut crosswise into slices

Preheat oven to 350 F.
Place cookies between 2 sheets of waxed paper; use rolling pin to crush cookies into crumbs. In a small bowl, combine cookie crumbs with butter. Press evenly into bottom and sides of 9½-inch deep-dish pie pan.
In food processor, combine cream cheese, eggs, 3/4 cup sugar, flour and vanilla; process until smooth. Reserve 2 tablespoons caramel syrup. Combine remaining caramel syrup with ½ cup cheese mixture; toss with banana slices; pour evenly into crust. Top with remaining cheese mixture.
Bake 50 minutes or until just set, tenting foil over cheesecake after 30 minutes.
Combine sour cream with remaining 2 tablespoons sugar; spread over hot cheesecake and bake for 5 minutes.
Cool slightly and refrigerate for 2 to 3 hours, or until chilled. Just before serving, drizzle with remaining caramel syrup.
