--- MELBA TOPPING ---
1 Pkg Frozen Raspberries (10 oz)
2 Tablespoons Sugar
2 Tablespoons Cornstarch
½ Cup Jellied Cranberry Sauce
1 Teaspoon Lemon Juice
1 Tablespoon Brandy (optional)
--- PINEAPPLE TOPPING ---
2 Tablespoons Sugar
2 Tablespoons Cornstarch
1 Can Crushed Pineapple (8-3/4 oz)
1 Tablespoon Lemon Juice
1 Drops Yellow Food Coloring (1 to 2)
Mandarin Orange Slices for garnish
--- STRAWBERRY TOPPING ---
1 Cup Fresh Strawberries, wash, hulled and halved
1 Pkg Frozen Strawberries (10 oz)
3 Tablespoons Cornstarch
1/4 Cup Sugar
1/4 Cup Water
1 Drops Red Food Color (1 to 2)
--- FRESH BLUEBERRY TOPPING ---
½ Cup Sugar
2 Tablespoons Cornstarch
½ Cup Orange Juice
2 Cups Fresh Blueberries

Melba Topping: Defrost raspberries (remove metal lid from package and microwave 2 minutes on DEFROST. Remove from package into a dish. Microwave an additional 2 minutes on DEFROST.)
Combine sugar and cornstarch in a 1-quart batter bowl or glass measure. Drain juice from raspberries into sugar mixture and blend with wire whisk. Add cranberry sauce, lemon juice and brandy, if desired. Blend. Microwave 2 minutes on HIGH, or until thickened, stirring once with a wire whisk. Add raspberries and cool before topping cheesecake. YIELD: 1-1/2 cups
Pineapple Topping: Combine sugar and cornstarch in a 4-cup glass measure. Stir in undrained pineapple and lemon juice and microwave on HIGH 2-3 minutes, or until thick. Stir in food coloring. Cool before topping cheesecake. Garnish with mandarin oranges, if desired. YIELD: 1 cup
Strawberry Topping: Arrange fresh strawberry halves over top of cheesecake. Remove frozen strawberries from package and place in a 1-quart batter bowl or glass measure. Microwave on HIGH 2 minutes. Combine cornstarch and sugar in a small dish. Stir in water and blend mixture into strawberries. Microwave 2-3 minutes on HIGH until thickened. If color needs brightening, add 1-2 drops red food color. Cool and pour over cheesecake. YIELD: 1-1/2 cups
Fresh Blueberry Topping: Combine sugar and cornstarch in a 1-quart batter bowl or glass measure. Blend in orange juice and stir in blueberries. Microwave on HIGH 4-5 minutes, or until thickened, stirring once. Cool before topping cheesecake.
If fresh blueberries are unavailable, substitute one (16 oz) can and decrease orange juice to 1/4 cup. YIELD: 1-3/4 cups
