2 Tablespoons Butter, softened
5 1/2 Cups Chopped, peeled Apples
1 Can Refrigerated Flaky Biscuits (10 oz)
1/3 Cup Firmly Packed Brown Sugar
1/4 Teaspoon Cinnamon
1/3 Cup Light Corn Syrup
5 1/2 Teaspoons Whisky or Amaretto Liqueur
1 Egg
1/2 Cup Pecan Halves or Pieces
Glaze:
1/3 Cup Confectioner's Sugar
1/4 Teaspoon Vanilla
1 Teaspoon Whisky or Amaretto Liqueur
1 Teaspoon Milk (1 to 2)Recipe
Heat oven to 350 degrees.
Using 1 Tablespoon butter, generously grease bottom and sides of a 9-inch round cake pan or 8-inch square cake pan. Spread 1 cup of the apples in prepared pan.
Separate biscuits into 10 biscuits; cut each into four pieces. Arrange biscuit pieces, pointed side up, over apples. Top with remaining apples.
In a small bowl, combine remaining 1 tablespoon butter, brown sugar, cinnamon, corn syrup, liqueur and egg; beat two to three minutes, until sugar is partially dissolved. Stir in pecans and spoon over biscuit pieces.
Bake at 350 degrees for 35 to 45 minutes or until deep golden brown. Cool five minutes.
In a small bowl, blend all glaze ingredients until smooth. Drizzle glaze over warm coffee cake. Store in refrigerator.
