Apple Cheddar Fritters

1 Cup Flour
1 1/2 Teaspoons Baking Powder
1 Teaspoon Cinnamon
2 Tablespoons Confectioner’s Sugar
1/4 Teaspoon Salt
1/3 Cup Milk
1 Beaten Egg
1 Tablespoon Soft Butter
2 Medium Apples, peeled, cored, and diced into 3/8" chunks
1/2 Cup Shredded Sharp Cheddar Cheese

Recipe
Sift together into a large bowl the flour, baking powder, cinnamon, sugar and salt.
Mix milk with beaten egg and butter. Add to four mixture in two stages and blend until smooth.
Fold in diced apple and shredded cheese. Using 2 greased spoons, drop a few tablespoon-sized pieces into hot oil (365 degrees). Fry quickly, turning to color. Drain on wire rack.
YIELD: 18 to 20 fritters
