List of Ingredients
½ Cup Yellow Cornmeal
½ Cup All-Purpose Flour
2 Teaspoons Baking Powder
1/4 Teaspoon Salt
1 Tablespoon Sugar
1 Egg, beaten
½ Cup Evaporated Skimmed Milk
2 Tablespoons Vegetable Oil
Vegetable Cooking SprayRecipe
Combine first 5 ingredients in a medium bowl. Add egg, milk and oil; stir until batter is smooth.
Coat a cast iron corn stick pan with cooking spray. Heat in a 425 degree oven 3 minutes or until hot. Remove pan from oven; spoon batter into pan, filling 2/3rds full.
Bake at 425 degrees for 10 to 12 minutes, or until lightly browned.
YIELD: 12 corn sticks
