    Chow-Chow Relish

    2 Cups Chopped Onion
    2 Cups Chopped Green Tomatoes
    2 Cups Chopped Green Bell Pepper
    4 Cups Chopped Cabbage (1 Quart)
    1 Cup Chopped Red Sweet Peppers
    3 Tablespoons Plain Salt
    2 Teaspoon Celery Seeds
    2 Teaspoons Dry Mustard
    1 Teaspoon Turmeric
    1 ½ Cups Sugar
    1 Teaspoon Mustard Seed
    2 ½ Cups Cider Vinegar

    Recipe

    Combine chopped vegetables; sprinkle with salt; leave 4 to 6 hours in a cool place. Drain well.

    Combine in a large stainless pot the vinegar, sugar and spices; simmer 10 minutes. Add vegetables to vinegar mixture and bring to a boil. Pack boiling hot into hot sterilized jars and seal. DO NOT OVERCOOK OR THE VEGETABLES WILL NOT BE CRISP! If desired, process in hot water bath 10 minutes. Chill before serving.

    YIELD: 4 pints
