    3 ½ Cups Milk
    ½ Cup Sugar
    ½ Cup Cornstarch
    ½ Teaspoon Salt
    3 Eggs, well-beaten
    1 Teaspoon Vanilla Extract
    2 Large Bananas, peeled, sliced in half lengthwise and cut crosswise into slices
    40 Vanilla Wafers
    ¼ Cup Butter, melted
    Chocolate or Butterscotch Syrup
    Whipped Cream
    Additional Banana Slices

    In the top of a two-quart double boiler, scald 2½ cups milk. Combine remaining cup of milk with the sugar, cornstarch and salt; mix well. Gradually stir into hot milk.

    Cook, stirring constantly, over 1½ inches of simmering water until thick, about 6 to 10 minutes. Cover and cook about 6 to 10 minutes longer, or until very thick.

    Gradually stir half of hot mixture into eggs; return to pan. Cook and stir 3 minutes; cool 10 minutes.

    Gently stir in vanilla; cover and refrigerate until cold. Gently stir in bananas; chill.

    Place cookies between 2 sheets of waxed paper. Using rolling pin, crush cookies into coarse crumbs. Combine cookie crumbs with butter. Reserve ¼ cup crumbs for garnish.

    Into each of 6 parfait glasses, press about ¼ cup cookie crumbs into bottom. Top with about 1/3 cup pudding and 1 teaspoon chocolate syrup. Top with another 3 tablespoons crumbs, 1 teaspoon syrup and 1/3 cup pudding. Cover and chill.

    Just before serving, garnish with a dollop of whipped cream, banana slices, chocolate syrup and reserved cookie crumbs.

    YIELD: 6 servings
