1 1/3 Cups Oreo Cookie Crumbs (about 18 Cookies) Including Cream Filling
3 Tablespoons Butter, melted
1 Whole Pitted Dates (16 Oz.)
3/4 Cup Water
1/4 Teaspoon Salt
2 Cups Miniature Marshmallows
½ Cup Chopped Pecans
1 Cup Whipping Cream
1/4 Cup Sifted Powdered Sugar
½ Teaspoon Vanilla ExtractRecipe
Combine crumbs and butter, mixing well; set aside 1 tablespoon crumb mixture. Firmly press remaining crumb mixture evenly in bottom of a lightly greased 8-inch square baking dish. Bake at 350 degrees for 8 minutes.
Combine dates, water and salt in a large saucepan. Bring to a boil over medium heat; reduce heat, and simmer for 3 minutes or until dates are tender, stirring occasionally. Add marshmallows and pecans, and cook until marshmallows melt, stirring constantly. Cool. Spread mixture evenly over baked crust.
Beat whipping cream until foamy; gradually add powdered sugar and vanilla, beating until soft peaks form. Spread over date layer, and sprinkle with reserved crumb mixture. Chill at least 2 hours.
