    1 Cup Nonfat Plain Yogurt
    1 Cup Nonfat Vanilla Yogurt
    1 Can Apricots Packed in Juice (16 ounces)
    1 Envelope Unflavored Gelatin
    1/4 Tsp. Almond Extract

    Recipe



    Spoon the plain yogurt and vanilla yogurt into a yogurt cheese funnel. Set over a mug or tall drinking glass. Cover with a piece of plastic, refrigerate and allow to drain for 30 minutes. Drain the apricots, reserving the juice. Set aside the apricots. Measure the juice and, if needed, add enough water to equal 1 cup. Transfer to a 1-quart saucepan and sprinkle the gelatin over top. Let soften for 5 minutes.

    Bring to a boil over medium-high heat, stirring well to dissolve the gelatin. Remove from heat. Let cool for 5 minutes.

    In a blender, puree the apricots, almond extract and gelatin mixture.

    Place the yogurt cheese in a large bowl. Gradually whisk in the puree. Pour into individual dessert dishes. Refrigerate until firm, about 1 hour.
