    This is real, honest-to-goodness chocolate pudding made from scratch before the days of instant Jell-O Pudding. This is like your mother and grandmother used to make.

    List of Ingredients




    3/4 Cup Sugar
    1/3 Cup Unsweetened Cocoa Powder
    2 Tablespoons Cornstarch or ¼ Cup All-purpose Flour*
    2 2/3 Cups Milk
    4 Egg Yolks, beaten
    1 Tablespoon Butter
    1 ½ Teaspoons Vanilla Extract

    Recipe



    Combine sugar, cocoa powder and cornstarch in a medium-size heavy saucepan. Whisk in milk. Cook, stirring, over medium heat until mixture is thickened and bubbly. Cook, stirring, 2 minutes more.

    Remove from heat. Gradually stir about 1 cup of the hot mixture into beaten egg yolks. Return milk-egg mixture to the saucepan, whisking constantly.

    Bring to a gentle boil, reduce heat and cook, stirring 2 minutes more. Remove from heat. Stir in butter and vanilla.

    Pour pudding into a bowl or individual serving dishes. Cover the surface(s) with clear plastic wrap to prevent a skin from forming. Chill. Do not stir. If desired, serve with a dollop of sweetened whipped cream on top.

    YIELD: 6 servings
