Recipe Introduction
Tostadas are corn tortillas that have been fried crisp and topped with just about anything. In Mexico small, individual tortillas would be used, but elsewhere a handful of corn chips makes an excellent substitute. Americans will recognize this traditional dish from Guadalajara as the ancestor to nachos.

3 chorizo sausages*
2 cups refried beans, canned or recipe below
24 4-inch corn tortillas, or 12 4-inch corn tortillas, fried crisp, or a small handful of prepared corn chips per person

Red wine vinegar to taste
Olive oil to taste
Salt and freshly ground pepper to taste
1 onion, finely chopped
1-2 ripe avocados, peeled, pitted, and chopped

Remove the casing from the chorizo and brown the meat in a skillet over moderate heat, breaking the meat into small pieces as it cooks.
Heat the refried beans. Divide the fried tortillas or corn chips between 4 to 6 individual serving plates and top with the beans followed by the chorizo.
Toss the lettuce with vinegar, oil, salt, and pepper, and place on top of the chorizo. Garnish with onion, avocados, and tomatoes.
