10 Large Sweet Potatoes
3/4 Cup Butter, melted
3/4 Cup Brown Sugar, firmly packed
Recipe
Wash sweet potatoes and pierce with tines of a fork. Place on paper towel. Cook in microwave oven on High for 24 minutes, or until almost tender.
Peel and cut into half-inch slices. Combine melted butter and brown sugar. Layer potatoes in a 3-quart casserole, pouring butter-sugar mixture over layers. Cook in microwave oven on High 12-14 minutes or until tender.
YIELD: 12 servings
