    These muffins are by the famed heart surgeon, Dr. Denson Cooley. They are very heart friendly.

    List of Ingredients




    2 1/2 Cups All-purpose Flour
    1 Cup Sugar
    ½ Teaspoon Baking Soda
    ½ Cup Soft, tub Diet Margarine
    1 Teaspoon Vanilla Extract
    1 Cup Plain, low-fat or nonfat Yogurt
    3 Egg Whites, lightly beaten
    ½ Pint Fresh Blueberries

    Recipe



    Preheat oven to 350 degrees. Spray a 12-muffin baking pan with nonstick vegetable spray.

    Mix flour, sugar, soda, margarine, vanilla, yogurt and egg whites in large bowl. Beat 3 minutes at medium to high speed of electric mixer, or hand-mix until smooth. Fold blueberries into batter. Pour batter evenly into muffin cups. Bake until muffins are springy to the touch and lightly browned, about 20 to 30 minutes. Let cool 10 minutes.

    YIELD: 12 servings. Each serving: 216 calories; 4.6 grams protein; 4.3 grams fat (18% of calories); 39.6 grams carbohydrates.
