Step-by-step, here's how to cook perfect pasta.
Add water to a Dutch oven or large saucepan, allowing about 3 quarts of water for 4 to 8 ounces of pasta.
For each quart of water, add 1 teaspoon of oil and 1/4 teaspoon of salt. The oil helps to prevent the pasta from sticking.
Add the pasta, a little at a time, so the water does not stop boiling. For long pasta, such as spaghetti, dip one end into the water until it softens. Gently curl the rest of the pasta around and down into the pan.
Reduce the heat and simmer, uncovered, until the pasta is cooked.
To tell if the pasta is done, you don't need to throw it against a wall. Instead, simply remove a piece and bite into it. It should be al dente, or slightly firm to the teeth. The outside should be tender with a little firmness inside.
Drain the cooked pasta quickly. Give the colander a few quick shakes to speed up the process.
If you're using pasta to make a salad or other cold dish, rinse it under cold water to remove any excess starch.
