Christmas Ham & Turkey Loaf

1 Large Onion
2 Carrots, peeled
2 Stalks Celery
1 Unpeeled Apple, cored
3 Tablespoons Margarine
½ Cup Parsley Sprigs, lightly packed
2 Slices White Bread (2 to 3)
2 Lbs. Leftover Cooked Ham
1 1/2 Lbs. Ground Cooked Turkey
2 Eggs
1 Cup Hot Milk
1 Teaspoon Dry Mustard
½ Teaspoon Thyme Leaves
½ Teaspoon Black PepperRecipe
Cut the onion, carrots, celery and apple into chunks. Using the metal blade of food processor, process each separately until finely chopped. Turn into a wide frying pan and add the margarine. Cook, stirring over medium heat, until the vegetables are tender; set aside.
Meanwhile, process the parsley until finely chopped. Process enough bread to make 1 cup crumbs. Process ham, about a third at a time, until finely chopped.
In a large bowl, mix together the ham, turkey, parsley and cooked vegetables.
In another bowl, lightly beat together the eggs, milk, crumbs, mustard, thyme and pepper. Add to meat mixture and mix well.
Spray an 11" ring mold (3 quarts) or two loaf pans with non-stick vegetable spray. Pack mixture into prepared mold or pans and bake at 350 degrees for 1 hour, 10 minutes. Drain off fat. Cool in pan on a rack for 15 minutes; then invert onto a serving plate.
Let cool completely, then cover and chill. Plan on making the loaf a day ahead so it has ample time to chill.
This loaf slices easily for sandwiches or mound your choice of salad in the ring's center for an attractive presentation.
