2 Medium Heads Romaine Lettuce
3 Anchovy Fillets (or More to Taste)
3 Tablespoons Lemon Juice
1 Teaspoon Dijon-style Mustard
Salt to taste
Fresh Ground Black Pepper to taste
6 Tablespoons Olive Oil
½ Cup Grated Parmesan Cheese
1 1/2 Cups Garlic-flavored Croutons
Recipe
Separate lettuce, discarding tough outer leaves. Wash and dry thoroughly. Tear into bite-size pieces.
In a small bowl, mash anchovies. Stir in lemon juice, mustard, salt and pepper. Whisk in oil until well blended.
Place lettuce in a salad bowl; pour dressing over. Toss gently.
Add remaining ingredients; toss briefly and serve.
YIELD: 4 to 6 servings
