This is a very good soup to serve your loved ones on a hot summer day.
List of Ingredients
3 Large Ripe Avocadoes
1 1/2 Cups Whipping Cream
6 Cups Chicken Broth
1 Teaspoon Salt
½ Teaspoon Pepper
1/3 Cup Dry Sherry
Recipe
Peel and dice the avocados. Blend a third of the avocados with ½ cup of cream in a blender until smooth; repeat until all have been processed.
Bring the broth just to a slow boil, then reduce the heat to low. Stir in the avocado mixture and add the seasonings. Add the sherry, if desired, and mix well.
Chill thoroughly. Serve garnished with thin lemon slices and corn chips.
YIELD: 8 servings.
