    1 Cup Celery, sliced
    ½ Cup Onion, diced
    1 Cup Carrots, sliced
    2 Tablespoons Olive Oil
    4 Cups Beef Broth
    1/8 Teaspoon Pepper
    ¼ Teaspoon Crushed Red Pepper Flakes
    1 Can Beef Ravioli, 15 oz. can
    ¼ Cup Fresh Parsley, chopped
    Grated Parmesan Cheese

    Recipe



    In a large kettle, saute celery, onion and carrots in olive oil for 3 minutes; add broth and seasonings. Bring to a boil; reduce heat and simmer, covered, for about 15 minutes or until the vegetables are tender.

    Stir in the ravioli and heat through. Garnish with parsley and Parmesan cheese.

    YIELD: 1½ Quarts (4 to 6 servings)
