1 Large Hen (about 5 Pounds)
Water
3 Carrots, sliced
½ Stalk (½ Whole Bunch) Celery, trimmed and sliced
1 Large Onion, coarsely chopped
6 Garlic Cloves (1 Head), crushed
½ Bunch Parsley
12 Black Peppercorns
Salt to taste
Worcestershire Sauce to taste

Wash hen, remove giblets and split hen in quarters. Place in a large pot; add water to cover. Add carrots, celery, onion, garlic, parsley, peppercorns, salt and Worcestershire sauce to taste. Bring to a boil, reduce heat and simmer slowly for 1-1/2 to 2 hours, removing grease and foam with a skimmer while cooking.
Just before chicken is done, cook noodles in boiling salted water until they are firm to the tooth. When chicken is done, strain the soup and return the clear soup to the stove. Add sliced carrots, celery, diced chicken and noodles. Taste and correct seasoning.
Serve in hot bowls garnished with fresh chopped parsley.
