    7 Lbs. Chili Meat
    2 Quarts Chopped Onions
    2 Quarts Tomato Sauce
    ½ Cup Chili Powder
    1 1/2 Teaspoons Red Pepper
    1 1/2 Teaspoons Powdered Garlic
    7 Teaspoons Ground Cumin
    Salt to Taste
    3 Quarts Hot Water
    Masa Harina

    Recipe



    Cook meat slowly until color changes. Add chopped onions, cook until tender. Add all other ingredients and seasonings. Cook 2 hours. Stir often.

    Make a paste of masa harina and cold water. Add to chili, stirring often. Cook on low heat for 30 minutes.

    This recipe can be frozen.

    This makes a bunch of chili (approximately 5 gallons), but you can also double the above ingredients if you want to serve a huge crowd, or to make it up to sell.
