Carolyn's Squash Quiche

List of Ingredients
4 Slices Bacon, fried crisp and crumbled
2 Lbs. Squash, sliced
½ Cup Diced Onions
3 Eggs, well beaten
1 Teaspoon Salt
½ Teaspoon Pepper
1 Cup Cheddar Cheese, grated
2 Slices Stale Bread, crumbled or
1 Cup Buttery Cracker Crumbs
1 Jar Diced Pimento (2 oz) drained
Recipe
Place squash slices in enough water to cover, and simmer 10 minutes, or until done, stirring constantly. Drain thoroughly and mash with a potato masher; set aside.
Saute onion in 2 tablespoons butter or bacon grease until tender. Combine 3/4 cup bread or cracker crumbs with rest of ingredients, blending well.
Spoon lightly into a lightly buttered 2-quart casserole dish and sprinkle additional grated cheese on top. Then sprinkle remaining bread or cracker crumbs over cheese. Cover dish and bake at 350 degrees for 45 minutes.
Delicious hot or cold!
