    This creamy, hearty, potato soup has been one of my favorites for years. It's simple but oh how yummy!!!

    List of Ingredients




    6-8 medium potatoes peeled and chopped
    1 large onion - diced
    2 stalkes celery - diced
    1 stick butter or margarine
    1 cup milk
    1 cup cold water
    2 heaping tablespoons plain flour
    salt and pepper to taste
    1 cup bacon crumbled*(optional)

    Place chopped potatoes in a large pot and cover with cold water.Bring to a boil and reduce heat to medium. Halfway thru cooking add celery and onion, cook until potatoes are tender.
    Combine 1 cup cold water with the flour, allow to sit for 3 to 5 minutes then stir to dissolve flour. Be sure to dissolve flour completely. (If flour is not dissolved completely with water, you will have lumps!) Pour slowly into potatoes. Stir to mix well. Soup should start to thicken. Add one(1) stick of butter or margarine, let come to a "lazy" boil, pour milk into mixture very slowly, stirring constantly.
    Add salt and pepper to taste. Reduce heat to simmer and allow to simmer for 10 minutes. Remove from heat and add crumbled bacon if desired.

    I serve this soup with a hot cake of cornbread!
