    These potato boats will knock everyone's socks off!!!!

    List of Ingredients




    2 large baking potatoes
    1 cup diced ham
    1/2 cup diced onion
    1 cup sour cream
    2 tablespoons butter or margarine
    2 cups shredded cheddar(i use medium sharp cheddar)
    2 tablespoons finely chopped cilantro (add more or less to taste)
    salt and pepper to taste

    Wash and bake potatoes

    Cut potatoes lenghtwise in half. Scoop out potatoes leaving about a 1/4" in the bottom and around the sides to hold potato together.
    With a fork, break up cooked potato, but do not mash.
    add all of the other ingredients except reserve (1) cup of cheese. Mix all ingredients well. With spoon or hand, restuff and shape potatoes, piling them high! Top with remaining shredded cheddar and return to oven set at 400 degrees and cook until cheese is melted.

    I serve these with a simple garden salad and it's a wonderful, quick meal.
