    This recipe serves four and is delicious.

    List of Ingredients




    8 lg. eggs
    1/2 cup cold water
    1/2 tsp. salt
    4 tsp. butter
    1 cup swiss cheese, grated
    1 lb. asparagus, Blanched and quickly cooled in ice water
    2 tsp. fresh basil, minced
    1/8 tsp. freshly ground pepper
    1 1/2 cup cherry tomatoes, halved

    Recipe



    Whisk together eggs, water and salt in a bowl.

    For each omelet, melt 1 tsp. of the butter in a non-stisk eight inch skillet or omelet pan over medium heat. Add 1/2 cup of the egg mixture, and cook until set, approx. one minute.

    Sprinkle 1/4 of the cheese over half of the omelet, and top with 1/4 of the asparagus spears. Add 1/2 tsp. basil, and salt and pepper. Fold omelet over as you slide it onto each plate. Garnish with cherry tomato halves.
