Potato Skins

Washed potato peels (I usually cut the peels a little thicker when
making mashed potatoes)
Shredded cheddar cheese
1-2 lbs of bacon (depending on number of peels you are doing) fried and
crumbled
Recipe
Deep fry the potato skins in oil, turning over a couple of times. Do
not make too crispy.
Remove the skins when the center is cooked and place on napkins to cool
and drain.
After the skins cool, toss 12-15 of them in a freezer bag with a
handful
of shredded cheese and a couple of pinches of crumbled bacon.
Cooking Instructions:
Place the potato skins on a plate, overlapping them. Place the cheese
and bacon on top of the skins and microwave for approximately 2
minutes.
