    List of Ingredients




    1 cup lukewarm water
    1 large egg
    3 cups all-purpose flour
    ¼ cup vegetable shortening
    3/4 tsp. salt
    ¼ cup granulated white sugar
    3 tsp. yeast
    2 tsp. vital wheat gluten (optional)

    Recipe



    Put all ingredients in bread machine in order listed; choose dough
    cycle. When done, remove
    dough and gently roll into a cylinder shape about 12 inch long. Divide
    dough into 12 equal sections for hot dog buns (8 to 10 for hamburger
    buns, 6 to 8 for hardrolls). Shape sections into 6 inch tube shaped rolls
    for hot dog buns. (for hamburger rolls and hardrolls, roll into balls
    and then flatten top slightly). If making hardrolls, brush with butter
    before putting in oven. Brush again 1/2 way through cooking. Place on
    greased baking sheet. Cover and let rise 10 to 15 minutes. Bake at 400°F
    for 12-15 minutes for hot dog and hamburger rolls, 13-17 minutes for
    hard rolls.
    Rachael's Recipe Notes:
    For kummelweck rolls, brush with with salted egg wash (1 egg white,
    pinch of salt, couple Tablespoons of water whisked together. Bake for 10
    to 14 minutes, brush with salted egg wash again, sprinkle with caraway
    seeds and coarse salt. Return to oven and bake another 3 to 5 minutes.
    You can do the same with poppy seeds, sesame seeds or minced onions
    (leave out the coarse salt).
