    FLUFFY OVEN EGG AND BACON

    1/2 lb. bacon
    1/2 lb. chopped onion
    1/2 c. BLM
    3 eggs
    1 1/4 c. milk
    1/4 tsp. salt
    1/8 tsp. pepper
    1/2 c. shredded Cheddar or Swiss
    cheese

    Recipe



    Heat oven to 375 degrees. Grease 1 1/2 quart round
    casserole. Cut bacon slices into thirds. Cook and stir
    bacon in a 10 inch skillet over medium heat until almost
    crisp, add onion. Cook, stirring frequently, until bacon is

    crisp, drain. Spread bacon and onion in bottom of
    casserole. Beat BLM , eggs, milk, salt and pepper with hand

    beater until almost smooth. Slowly pour egg mixture over
    bacon; sprinkle with cheese. Bake uncovered until knife
    inserted in center comes out clean, about 35 minutes. Four
    to six servings. Can substitute 1 cup of one-fourth inch
    cubes of fully cooked smoked ham for bacon. Spread ham and
    onion in bottom of casserole and continue as written.
