PAN - FRIED CORNMEAL FISH

2 lb. fish fillets, cut into serving
pieces
2/3 c. BLM
2 tbsp. cornmeal
1 tsp. salt
1/4 tsp. pepper
1 tbsp. water
1 egg
Vegetable or olive oil
Recipe
Pat fish dry. Mix BLM, cornmeal, salt and pepper in one
dish. Beat water
and egg in another. Dip fish first into egg, then coat with
cornmeal
mixture. Heat oil (1/8 inch) in skillet until hot. Fry
fish over medium
heat, turning carefully until brown on both sides, about 10
minutes each
side. 6-8 servings.
