8 or 9 Loaves:
4 yeast cakes or dry yeast
1 1/4 c. warm water
1 c. powdered milk
2 qt. (8 c.) warm water
7 Tbsp. shortening
14 c. flour
3/4 c. sugar
3 Tbsp. salt
4 Loaves:
2 yeast cakes or dry yeast
1/2 c. warm water plus 1/8 c.
1/2 c. powdered milk
1 qt. (4 c.) warm water
3 1/2 Tbsp. shortening
7 c. flour
1/3 c. sugar
1 1/2 Tbsp. salt
Recipe
Put yeast cakes or dry yeast in warm water. Set aside
to dissolve. Dissolve powdered milk in warm water (I use
non-instant milk). Scald milk. Add shortening to melt. In
bowl large enough to mix bread, put flour, sugar and salt.
Cool milk to lukewarm. Add to flour mixture in bowl. Mix.
Add softened yeast mixture. It is important that the flour
and
milk mixture is not too hot or it will kill the action of
the
yeast. Continue to mix thoroughly adding flour until the
right
consistency. Knead for 10 minutes at least.
Grease bowl turning dough, making sure top of dough is
greased. Cover with cloth and put in warm place to rise. Let
rise until double or more in bulk. Punch down and let rise
until double again. Put in pans, filling about 1/3 full. Let
rise until double or more.
Bake at 350 degrees for 30 minutes or until bread sounds
hollow
when tapped. (The directions reads 30 to 40 minutes, but 30
is
about right in my oven.) Grease bread upon removing from
oven
for a nice crust.
