Buttermilk Pie

5 Tablespoons flour
1 teaspoon vanilla
2 cups buttermilk
1 9-inch unbaked shell
2 eggs
Coconut (Optional)
3/4 cup sugar
4 Tablespoons margarine
Recipe
Mix flour with ½ cup buttermilk until smooth. Beat eggs, add sugar and
margarine. Add rest of buttermilk and vanilla. Mix all ingredients
thoroughly. Pour into unbaked pie shell and bake at 350 degrees for 40
to 45
minutes.
*This pie will rise very high, but will sink upon removing from oven.
Coconut sprinkled over the pie gives a pretty finish.
Yield: 6 to 8 servings.
