Carrot Spice Cake

2 cups flour
1 cup packed brown sugar
1 tsp. baking powder
1 tsp. baking soda
2 tsp. ground cinnamon
1/2 tsp. ground allspice
1/2 tsp. salt
1-1/4 cups shredded carrot
1 cup applesauce (use instead of any oil)
2 eggs (you can use egg replacements)
1 can (8 oz.) crushed pineapple, drained
1 tsp. vanilla extract
1/2 cup golden raisins
Recipe
In large bowl, with electric mixer, combine flour, sugar, baking
powder, baking soda, cinnamon, allspice, salt and carrot.
Add applesauce eggs, pineapple and vanilla. Beat 2 minutes at
medium speed.
Stir in walnuts and raisins. Pour batter into greased 10 to 12 cup
nonmetal Bundt microwave pan.
Cover top of pan with wax paper. Elevate fluted pan in microwave
with an inverted bowl so bottom of cake will bake well.
Cook at Medium 15 minutes, or until toothpick inserted near center
comes out clean.
To Complete: Let stand, uncovered, 10 minutes. Store covered until
ready to serve.
Note: Microwave baking time is calculated on a 1,000 watt oven. If
you have a 800 watt oven add 2 minutes to bake time.
You can also bake this cake in a conventional oven at 350 º F.
Baking time is about 20 to 25 minutes. In either case, let the cake
get dark brown and crusty on the outside.
Yield: 8 servings.
