    1/4 cup sugar
    2 t. cornstarch
    Dash salt
    1/2 cup water
    3/4 t. grated lemon rind
    2 1/2 T. lemon juice
    1 T. margarine
    8 oz. reduced fat pound cake
    6 T. reduced calorie whipped topping

    Recipe



    Combine sugar, cornstarch, and salt in 2 cup glass measure. Add water,
    and
    stir until sugar dissolves. Microwave at High for 1 minute. Stir well.
    Microwave
    at high for 1 to 1/2 minutes, stirring at 30 second intervals, until
    mixture
    is clear, thickened and bubbly. Stir in lemon rind, lemon juice, and
    margarine. Cut pound cake into 6 slices; place on individual serving
    plates. Top each
    slice with 2 T. lemon sauce and 1 T. whipped topping. Serves 6
