MIX-IN-PAN CARROT CAKE

1 c. flour
3/4 c. sugar
1 tsp. cinnamon
1/2 tsp. salt
1/2 tsp. baking soda
1/2 tsp. baking powder
1/4 tsp. nutmeg
1 1/4 c. shredded carrots
2 eggs, lightly beaten
1/2 c. oil
1/4 c. water
1/2 tsp. vanilla
Recipe
In 8 or 9-inch square pan with fork, mix well the flour,
sugar, cinnamon, salt, baking soda, baking powder and
nutmeg.
Add carrots, eggs, oil, water and vanilla. Mix briskly with
a
fork until thoroughly blended. Bake in preheated 350 degrees
oven
about 30 minutes or until pick inserted in center comes out
clean and cake pulls away from sides of pan. Cool in pan on
rack. Sprinkle with confectioners sugar.
