Miniature Cheese Cakes

2 pkgs. (8 oz. each) cream cheese
3/4 C. sugar
2 eggs
1 Tbsp. lemon juice
1 tsp. vanilla
1 can cherry pie filling
Vanilla wafers (chocolate wafers can be used if you prefer)
Recipe
Mix together with electric mixer the cream cheese, sugar, eggs, lemon
juice, and vanilla. Put baking cups in muffin tins and place one
vanilla wafer on the bottom of each cup. Fill with cream cheese
mixture about 2/3 full. Top each with a spoonful of cherry pie
filling. Bake at 375-degrees for 15-20 minutes then refrigerate.
Makes about 18 cheese cakes.
