BEEF DUMPLING GOULASH

List of Ingredients
4 Tablespoons butter or margarine
1 1/2 cups chopped onions
2 pounds beef stew meat, in 1/2-inch cubes
1/2 cup tomato sauce
3/4 cup beef broth
1 3/4 tsp. salt
2 1/2 tsp. paprika (Hungarian preferably, but any will do)
1/4 tsp. black pepper
1 cup sour cream
Recipe
Melt butter in a skillet; sautee onions and beef until browned. Add
tomato
sauce,
broth, salt, paprika and pepper. Cover and cook over low heat 45
minutes
or
until beef is tender. Stir in sour cream gradually. Heat and taste
for
seasoning.
Double if serving more than three people.
Dumplings:
1 1/2 cup sifted flour
2 tsp. baking powder
1/4 tsp. thyme
2 T. minced parsley
3 T. shortening
Approx. 3/4 cup milk
3/4 tsp. salt
Sift together flour, baking powder and salt. Mix in thyme and parsley,
then cut in
shortening. Stir in just enough milk to make a batter thick enough to
hold
it's
own shape. Drop from a teaspoon around edge and on top of goulash.
Cover
tightly and cook over low heat for 18 minutes (don't peek at dumplings
until
done - they need steam to cook).
