Carrot Casserole

Recipe Introduction
This tastes like a pumpkin dessert….you would not know you are
eating cooked carrots
List of Ingredients
1 pound cooked carrots (drained)
1 tsp vanilla extract
3 eggs
½ cup butter, melted (1 stick)
1/3 cup granulated sugar
Dash ground nutmeg
2 Tblsps flour
Dash ground cinnamon (or more)
1 tsp baking powder
Recipe
Preheat over to 350° F. Puree cooked and drained carrots in food
processor. Add eggs to pureed mixture and blend well. Add sugar,
flour, baking powder, vanilla, melted butter, nutmeg and cinnamon.
Puree until smooth. Pour into greased 1 ½ quart soufflé dish or
casserole dish.
Topping:
¼ cup corn flake crumbs (or another cereal…just crush well)
2 Tblsps butter (soft)
3 Tblsps brown sugar
¼ cup chopped nuts
Combine crumbs, brown sugar and softened butter with pastry blender
or fork. Add nuts. Sprinkle over casserole. Bake in oven 1 hour
(do NOT cover).
