Chicken Tetrazzini

7 oz. spaghetti, broken into sm. pieces
1/4 c. margarine or butter
1/4 c. all purpose flour
1/2 t. salt
1/4 t. pepper
1 c. chicken broth
1 c. whipping cream or half and half
2 T. sherry
2 c. cut up cooked chicken or turkey
1 can (4 oz.) mushroom stems and pieces, drained
1/2 c. grated Parmesan cheese
Recipe
Cook spaghetti as directed on pkg.;
drain. Heat margarine in 3 qt. saucepan
until melted. Stir in flour, salt, and
pepper. Cook, stirring constantly, until
smooth and bubbly; remove from heat.
Stir in broth and cream. Heat to boiling,
stirring constantly. Boil and stir 1 min.
Stir in spaghetti, sherry, chicken and
mushrooms. pour into ungreased 2 qt.
casserole or 8x8x2" baking dish. Sprinkle
with cheese. Cook uncovered in 350° oven
until top is golden brown, about 30 min.
Makes 6 servings.
Do ahead Note: Before cooking, cover and
refrigerate no longer than 24 hours. To
serve, cook uncovered in 350° oven 45 to
50 min.
