Chicken and Noodles in Cream Sauce

Serves 4 to 6
List of Ingredients
1 pkg. (8 oz.) noodles
3 T. butter or margarine, divided
1 cup chopped mushrooms
2 T. minced shallots
3 T. flour
2 cups chicken broth
1/2 cup heavy cream
Salt and pepper to taste
2 to 3 cups cooked chicken, cubed
2 T. shredded cheese
Recipe
Cook noodles slightly less than package directions. Toss with 1 T.
butter and
keep warm. Melt remaining butter in pan. Add mushrooms and shallots.
Cook
until liquid evaporates. Add flour; stir until blended. Add broth,
stirring
rapidly until thickened and smooth. Simmer 5 minutes. Add cream to
broth mixture
with salt and pepper to taste. Simmer briefly. Add chicken. Spread
noodles in
buttered 12 x 8 x 2" baking dish. Next add a layer of chicken in sauce;
sprinkle
with cheese. Bake at 450 for 10 minutes or until brown and heated
through.
