HAM RISOTTO

Serves 4
List of Ingredients
1 1/4 cups long-grained rice, uncooked
1 finely chopped onion
1 leek, sliced
2 tbs butter or margarine
water, salt
1 stock cube
coarsely ground pepper
salt
dried herbs of your choice
1/2 lb frozen vegetables (a mix of corn, sweet pepper and green peas)
1/2 cup smoked ham, shredded
1 1/4 cups strong, grated cheese
Recipe
Sautee onion and rice, add water, stock cube and pepper. Boil the rice
according to package instructions. Add vegetables when 5 minutes remain
of
the cooking time.
Shred the ham, fold it into the rice, flavor with herbs and serve with
grated cheese and a fresh salad.
