Lazy Paella

1 (2 1/2 to 3 lb. ready to cook broiler fryer chicken, cut up
2 T. salad oil
1/2 env. dry onion soup mix
1 c. uncooked long grain rice
1 (13 3/4 oz. can chicken broth (not condensed
1 (3 oz.) cans sliced mushrooms, drained (1/2 c.)
1 (8 oz. can peas, drained
1 (4 1/2 oz.) can shrimp, drained
Recipe
In skillet brown chicken in hot oil. Season
with salt and pepper. Combine soup mix,
uncooked rice, broth, mushrooms, peas,
and shrimp. Spread in 13x9x2" baking
dish. Place chicken pieces on top. Sprinkle
with paprika. Cover dish tightly with foil.
Bake at 350� for 1 hour. Makes 4 to 6
servings.
