    2 regular pkgs frozen chopped spinach
    1 medium large onion
    4 eggs
    1 ½ cups milk
    1 ½ cups cubed mild or medium cheddar cheese
    2/3 loaf inexpensive white bread, dried and cubed
    1 stick margarine or butter

    Recipe



    In a saucepan, boil spinach and onion together in a small amount of
    water, until spinach is tender and onion is translucent. Set aside
    spinach mixture to cool.

    Once spinach and onion mixture is cool, mix the eggs and milk
    together well and then combine spinach/onion mixture with the milk
    and eggs.

    In a greased baking pan, pour the spinach/onion/egg and milk mixture
    into the baking pan. Distribute the cubed cheddar cheese evenly
    across the spinach mixture in the baking pan.

    Have your dried bread already cubed. Take a sauce pan and melt the
    stick of margarine or butter.

    Distribute the dried bread cubes across the top of the spinach
    mixture with the cheese in it.

    Drizzle the melted butter or margarine over the dry bread cubes as
    evenly as you can and place all in to bake at 325 degrees for 30
    minutes or until bread cubes are golden brown.
