Tuna Potato Scallop

1/4 c. margarine or butter
1/4 c. all purpose flour
1/4 t. salt
dash of pepper
1/2 t. dry mustard
1 c. milk
1 c. shredded process American or cheddar cheese (4 oz.)
1 med. onions, chopped (1/2 c.)
1/4 c. snipped parsley
2 c. thinly sliced cooked potatoes
1 can (6 1/2 oz.) tuna, drained
1/4 c. dry bread crumbs
2 T. margarine or butter, melted
Recipe
Heat 1/4 c. margarine in 2 qt. saucepan
over low heat until melted. Stir in flour,
salt, pepper and mustard. Cook over
low heat, stirring constantly, until
smooth and bubbly. Stir in milk. Heat
to boiling, stirring constantly. Boil and
stir 1 min. Stir in cheese, onion and
parsley. Layer potatoes, tuna and
sauce in greased 1 1/2 qt. casserole or
10x6x1 1/2" baking dish. Mix bread
crumbs and 2 T. margarine; sprinkle
over top. Cook uncovered in 375° oven
until bubbly and golden brown, 40 to
45 min. Makes 4 to 6 servings.
