Asian Fried Rice

Serves 4 (1/2 cup)
List of Ingredients
1/4 cup chopped onions
1/2 cup sliced carrots
2 Tbsp. chopped green peppers
2 cups cooked rice
1/2 cup water chestnuts, drained
1/2 cup sliced mushrooms
2 Tbsp. lite soy sauce
3 egg substitute equivalents, beaten
1/2 cup sliced scallion Recipe
In a large skillet, heat oil. Sauté onion, carrot, and green pepper for
5 to 6 minutes.
Stir in rice, water chestnuts, mushrooms, and soy sauce, and continue
to cook for 8 to 10 minutes.
Stir in eggs, and continue to cook for another 3 minutes. Top with
sliced scallions to serve.
