Chicken Stir Fry

1 lb. boneless, skinless chicken breasts
1 tsp cornstarch
1/4 teaspoon freshly ground pepper
1/8 teaspoon salt
1 stalk broccoli, chopped into florets
5 stalks celery, sliced
3 green onions, sliced
1 sweet red pepper, sliced
2 tsp olive oil
1 tablespoon fresh minced ginger
1 clove garlic, minced (more if you LOVE garlic)
1 fresh jalapeno pepper, seeded and thinly sliced
hot cooked rice to serve stir-fry over
Recipe
Cut chicken into strips. In small bowl, combine the chicken
with cornstarch, pepper and salt. Set aside. In
microwavable container, cover and microwave the
broccoli,celery, onions and pepper with 1 teaspoon of water
until veggies are slightly tender. In wok, heat oil over
medium-high heat. Stir fry the fresh ginger and garlic for
about 10 seconds. Add chicken and stir-fry until completely
cooked. Add vegetable mixture and jalapeno pepper. Stir fry
until veggies are just tender. Serve over hot cooked rice.
