Susan's Pumpkin Butter

3 1/2 cups cooked or canned pumpkin
4 1/2 cups sugar
1 T. pumpkin pie spice
1 box clear jelling agent
Recipe
Measure pumpkin into a large pan. Measure sugar and set aside. Add
spice and
jelling agent to pumpkin and mix well. Place over high heat, stir until
mixture comes to a boil (it will never probably come to a rolling
boil...just a plop
plop). Immediately add the sugar and stir in well. Bring to a rolling
boil
and boil hard for 1 minute, stirring constantly. Remove from heat and
ladle into
jars. Cover with paraffin. Makes about 5 1/2 cups.
