List of Ingredients
1/2 cup margarine
1/2 cup sugar
1 egg
1/2 teaspoon vanilla
2 ounces unsweetened chocolate -- melted
1 tablespoon milk
2 cups flour -- sifted
1 teaspoon baking powder
1/2 teaspoon salt
Confectioner's Sugar Icing 1 -- with added
mint extract
Colored sugar
Mint Filling:
1/4 cup butter
2 cups confectioner's sugar -- sifted
1 dash salt
1 tablespoon milk -- hot
1/4 teaspoon peppermint extract
Recipe
1. Cream margarine and sugar.
2. Beat in egg, vanilla and chocolate. Add milk.
3. Mix salt and baking powder with flour and sift into cream mixture.
4. Shape dough into 2 rolls, 2" in diameter.
5. Wrap in wax paper and chill overnight.
6. Preheat oven to 350°.
7. Cut into thin slices and bake on an ungreased cookie sheets for
10 min, or until done.
8. Cool and spread half the cookies with Mint Filling and top with
remaining half of
cookies.
9. Frost with green tinted confectioner's sugar icing, mint
flavored, and sprinkle
with a small round of colored sugar on each.
