1/3 cup prunes
2 tablespoons water
1 tablespoon corn syrup
1/3 cup sugar
1/3 cup firmly packed brown sugar
1/4 cup water
2 tablespoons skim milk
2 teaspoons vanilla extract
1 teaspoon instant espresso coffee granules
1 cup all-purpose flour
1 1/2 teaspoons pumpkin pie spice
1 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cups quick-cooking oatmeal -- uncooked
3/4 cup dried cranberries
1/2 cup golden raisins
Vegetable cooking spray
Recipe
Combine prunes, water, and corn syrup in food processor; cover and
process
until smooth.
Combine prune mixture, sugar, and next 5 ingredients in a large bowl;
beat
at medium speed of a mixer 1 minute or until well blended.
Combine flour and next 3 ingredients; add to purée mixture, stirring
well.
Add oatmeal, cranberries, and raisins; stir well.
Drop dough by rounded teaspoonfuls 2 inches apart onto baking sheets
coated with cooking spray. Bake at 350 degrees for 12 minutes. Remove
from
pans, and let cool on wire racks.
