    1 cup sweet cream, scalded
    1 teaspoon sugar
    1 ounce yeast, crumbled
    1 cup butter
    3 cups sifted flour
    4 egg yolks
    4 tablespoons sugar
    1 teaspoon salt
    Grated rind of one lemon

    Recipe



    Scald cream and cool to lukewarm. Add 1 teaspoon sugar and crumbled
    yeast to
    cream. Set aside to proof.
    Mix butter with flour with pastry blender until it resembles cornmeal.
    Beat
    yolks. Add the 4 tablespoons sugar, cream and yeast mixture, salt and
    lemon
    rind. When well-blended, add to the butter-flour mixture and beat well.
    Store in refrigerator overnight or at least 4 hours. In the morning,
    roll
    out to 1/4-inch thick, cut in circles and fill with desired fillings.
    Bake
    at 350 degrees for 20 to 25 minutes. The kolache should be light in
    color.

    Mom's Cheese Filling
    1 pound cottage cheese
    1 cup powdered sugar
    1/2 teaspoon salt
    1 teaspoon vanilla
    1/2 cup cream
    3 eggs, separated
    Put cottage cheese through sieve; add sugar, salt, vanilla, cream and
    beaten
    yolks. Beat egg whites until stiff. Fold into cheese mixture.

    Apricot Filling
    1 cup dried apricots
    3/4 cup water
    1/4 cup sugar
    Honey to taste (optional)
    Combine apricots and water in small saucepan over medium heat. Cook
    until
    tender, about 10 minutes, then transfer to a blender, processor or
    grinder
    and puree. Add sugar and honey before using.

    Prune Filling
    1 cup pitted prunes
    1/2 cup water
    Sugar and cinnamon
    Combine prunes and water in small saucepan over medium heat. Cook until
    tender, about 10 minutes, then transfer to blender, processor or
    grinder and
    puree. Add sugar and cinnamon to taste. Cool before using.

    Nut Filling
    1/2 cup milk
    1 pound finely chopped walnuts
    1/2 cup sugar
    1 tablespoon butter
    1 teaspoon fresh lemon juice
    Heat milk in medium saucepan over medium heat. Add nuts and sugar and
    mix
    well. Stir in butter and lemon juice and blend thoroughly. Cool before
    using.
